Mutton Biryani In Pictures

My way of making mutton briyani at home.  Get some mutton and clean thoroughly.

Use below ingredients and marinate for an hour.

Use a cooker and fry some raw spices like cardamom, cinnamon, shahjeera, biryani leaf,Star anise, Onion, Tomato, Curdetc. Make sure mutton is cooked by trying to split the piece using spoon.

Fry some onions in ghee, Keeps aside. Fry some cashews and dry grapes as toppings for your biryani.

Now take a large curry pan. Layer your partly cooked biryani rice or long grain rice with mutton or leave mutton at bottom and add some water.  Cover. Let rice cook directly with mutton.

Have it with raitha. Or simple eat it straight. Use ghee instead of oil for taste. Enjoy. Relish some good food.

A husband wakes up at home with a huge hangover. He forces himself to open his eyes, and the first thing he sees is a couple of aspirins and a glass of water on the side table. He sits down and sees his clothing in front of him, all clean and pressed. He looks around the room and sees that it is in perfect order, spotless, clean. So is the rest of the house.

He takes the aspirins and notices a note on the table. “Honey, breakfast is on the table, I left early to go grocery shopping. Love You!”

Totally shocked with the note , he goes to the kitchen and sure enough there is a hot breakfast and the morning newspaper. His son is also at the table, eating. He asks, “Son, what happened last night?”

 His son says, “Well, you came home around 3 AM, drunk and delirious.  Broke some crockery, puked in the hall, and gave yourself a black eye when you stumbled into the door”. Confused, the man asks, “So, why is everything in order and so clean, and breakfast is on the table waiting for me? I should expect a big quarrel with her!”

 His son replies, “Oh, that! Mom dragged you to the bedroom, and when she tried to take your clothes n shoes off, you said, “LADY LEAVE ME ALONE! I’M MARRIED!”

Moral :

Self-induced hangover – Rs 400.00
Broken crockery – Rs 800.00
Breakfast – Rs 50.00
Saying the Right Thing While Drunk – “PRICELESS”

Cucumber – The green medicine !!

Cucumbers –  Small … Green …. Smells good…. Tasty …… MOST of all … contain most of the vitamins you need every day, It has Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc… Oooops Long List what say??

When you feel tired in the afternoon, Stop that Cuppa &  pick up a cucumber. They provide a quick pick-me-up that can last for hours.

Pests in your Flower bed???  Place a few slices in a small Aluminium  tin . The chemicals in the cucumber react with the aluminum to give off a scent undetectable to humans but drive garden pests crazy and make them flee the area.

Cucumber works great on wrinkles too  & Believe me you need not limit to any amount gorge on it.

Want to avoid a hangover or terrible headache …..? Eat a few cucumber slices before going to bed after that  drink . Cucumbers contain enough sugar, B vitamins and electrolytes to replenish essential nutrients the body lost, keeping everything in equilibrium, avoiding both a hangover and headache!!

Stressed out and don’t have time for massage, facial or visit to the spa? Cut up an entire cucumber and place it in a boiling pot of water, the chemicals and nutrients from the cucumber with react with the boiling water and be released in the steam, creating a soothing, relaxing aroma that has been shown the reduce stress in new mothers and college students during final exams.

Just finish a business lunch and realize you don’t have gum or mints? Take a slice of cucumber and press it to the roof of your mouth with your tongue for 30 seconds to eliminate bad breath, the photochemical will kill the bacteria in your mouth responsible for causing bad breath.

So you can now stock your refigerator… with few of those Green ones…

Mint(pudhina)-Pepper(kali mirch) Spicy Hyderabadi Mutton curry

This dish tastes so good because it uses the theory of “confluence of too many spices or ingredients gives a ‘donot know what it tastes like’ “. Hence, donot use dhania or other spices just because you use it for other mutton curries.

Ingredients:

Mutton 1/2 kg(after removal of fat – so get around 650 gms) – Remove all fat from the mutton. Clean it thoroughly.

Onions – 3 medium sized; oil

8-12  full green chillies

8-10 garlic cloves and equal amount of ginger.

Mint leaves – 1 hand full leaves alone

1 TSP of pepper corns

1 TSP of salt

Grind all ingredients into a paste and marinate mutton for an hour. While grinding – use just the required amount of water so that the grinder gets going.

Now, visualise this mutton and smell it in your mind. pasting picture for easy visualisation process.

1. Take a cooker and add 8 TBSP of oil or as required.  Add a medium cinnamon stick, 3 cloves, 2 cardamom and 2 bay leaves and 1/2 tsp of shah jeera(cumin) seeds to spice up the oil.

2. Take the marinated mutton and fry for some time(5 mins).

3. Close the lid and wait for 15-20 minutes.

4. After 20 minutes put of the stove. Leave it for 5 minutes without opening the lid.

5. Open the lid – check the mutton if it is cooked or not by pressing the stick into the mutton, and fry for an extra couple of minutes to get the required thickness of gravy.

6. Lick a little of the gravy to see if it is right and spicy.  Enjoy !

How to cut Jackfruit ?

You will need some cooking oil and a sharpened knife to cut the jack fruit. All through out make sure you donot lose focus. Else you will cut your fingers.

Make a cut at the centre and run the blade all along the jack fruit. The centre of the fruit is a bit tricky and you will need some strength to cut through. Split the jack fruit open. howtocutjackfruit_clean the gum at the centre using stickThe ripe fruit is somewhat laxative. Clean the latex or gum from the centre using a stick. Roatate the stick and the gum will come off. This is important because it causes digestive ailments and diarrhea. It is the raw, unripe fruit that is astringent and indigestible. Mix the gum or latex with vinegar and you can heal a snake bite. howtocutjackfruit_chop the end of each fruitNext remove the bulbs carefully by choping off the gum at the tip. The threads that are used for making chips can also be removed. Be extra careful with the knife.

Voila. You have cut your first jackfruit. Wasn’t that easy ? They say that each jackfruit tree produces 150 – 500 fruits annually and is useful during morning hangovers – “useful in overcoming the influence of alcohol on the system.”

Nutty affair — Almonds the best of all..

Well well … holidays…. all you should think about is   eat .. sleep …rest!! and Why not ??

So you can not blame me if I am thinking food all along!! Now almonds have caught my fancy!! Just because its the best nut of all…. ‘King’ of the nutty kingdom!!

Thanks to those Persian / Afghan traders we are enjoying Almonds today.. It is looked upon as the power house of energy!! and also used as the brain food… It is still considered as a delicacy… cherished  gift best of all a great munchie!!

Almonds are of 2 varieties Sweet  &  Bitter…… Sweet ones govern the food you cook… &  Bitter ones become a part of perfumes / syrups…

Almond butter is the best way you can use them… hmmmmm… yummy!! They have 20% protien.. close to 55 % fat!! Shocked ??  Dont be …. its Good Fat…. that adds glow to Skin / Hair / Nails….. Half beauty parlour 😉

It also has great fibre content that gives  the fullness of a food with good nutrient density….

Best to have Almonds as the first food of the day… Pre- soaked can help maintain the blood sugar level constant throughout the day….. 

Make sure Almonds are fresh … while consuming … avoid the sugary/ salty varieties…. Avoid with meals also as they are high in calories….

Totally Nuts Am I??? Yup… if you can find healthy / supple / beautiful body … why not Fall in love with this Nut with healing touch!! you will never regret..
